Sausage & Eggs....Cranked Up!

OK - I have no choice but to get back on the healthy eating train!  I did the Whole30 and loved it....so I'm baaaaack!  It's very similar to the Paleo way of eating and the only real adjustment I'm making is to reward myself with a little bit of cheese occasionally (not everyday).  Don't get me wrong, I love my sweets, but if I had a choice between a piece of cheese toast or a brownie...I'd take the toast! 

The difference this time, is I'm trying to gradually get the guys eating that way as well.  Sure makes it a heck of a lot easier, when I don't have to cook twice.  And even worse, cook something I can't eat.....rice, pasta, etc.

I was watching the Food Network today (in between napping) and suddenly the inspiration hit me to wing it and cook dinner from whatever ingredients are in the 'frig and pantry.  Here's what I came up with....

Ingredients:
  • Beef Polish Sausage (I looked at all brands and got the one with no added sugar), cut into bite size pieces
  • One bunch of green onions, diced
  • 1 heaping cup of broccoli slaw,
  • Jalapeno peppers (to taste), diced
  • Baby spinach, 2 handfuls
  • white wine, whatever you have in the frig (about 3 splashes)(This is NOT Whole30)
  • 3 eggs, scrambled
  • Hot sauce (Texas Pete, etc.)
  • Provolone, cheese (This is NOT Whole30...I repeat this is NOT Whole30)
  • Salt & Pepper to taste
  • Coconut Oil (I used the spray kind AND the oil)
Spray your medium sized saute' pan with the coconut oil and heat to medium.

Smells so good!

Add your sausage and let it cook in the oil for just a few minutes and then add a splash of wine and allow the sausage to cook until heated.  Remove only the sausage, but keep it close because you'll add it back in.

Green onion, broccoli slaw, jalapeno peppers....still smellin' some kinda good!

My new cooking essentials!

Add to wine, sausage juices and just a small amount (spoonful) of coconut oil, the chopped ingredients (green onions, broccoli slaw, peppers).  Wait until these ingredients have cooked for about 4-5 minutes and then add the spinach and another splash of wine.  Once it's cooked down, add the sausage back in.  Reduce heat to low and stir occasionally.

The veggies are underneath.  Add the spinach just before adding the sausage back in.


On another burner, prepare your scrambled eggs according to taste.  I added hot sauce, salt & pepper while they were cooking.

Everything is better with some heat!

Now get out your finest dinner plates..........layer first with scrambled eggs and top eggs with 1 slice of Provolone cheese.  Next layer is the veggies and sausage, which will melt that cheese perfectly (as Nan says...Cheese is good when it's ropey!)  You can always add a little more hot sauce at this point, but there is just the perfect amount of heat with what you've added already.

Breakfast is my favorite meal and fixing it for dinner, well that's just my ideal meal!  With the sausage and veggies blended together, it really goes well with the eggs.  I don't know what compliments what, but it just works! 

Of course, because I used whatever I had available, you can do the same!  Go for it and enjoy!
